According to Big Hospitality’s Food Trends Special Report (http://www.bighospitality.co.uk/Products/Food/Food-Trends-2011-Dining-Trends) we can look forward to: Flexible Pricing – charging for tables rather than meals and setting prices on the day to pull in diners at quiet periods; Thirty-Minute Lunches – faster service, accommodating our busier-than-ever lifestyles; Freestyle Cooking – allowing customers to choose their ingredients, in consultation with the chef (which, as anyone who knows me is ‘old hat’ to me as I’ve been demanding this for years!!); Coffee Shop Meals – growth of ‘in-between’ mealtime indulgences is less formal, cheaper and quicker! Eateries will also be focusing on customer service, offering a wider choice and generally fulfilling their customers’ desires – I, for one can’t wait to challenge them and see if I go back for more…watch this space!
